For the Love of Seafood!

Ok, I first have to say that I really really like seafood.  The problem is that I live in Utah.  We’re pretty far inland, and so sometimes the seafood isn’t the freshest when we eat it here.  Still, I love it.

So if I had to pick one of my favorite seafood dishes, I think I would have to go with this bacon-wrapped shrimp alfredo that my wife and I used to get at a restaurant that went out of business.  This dish was so incredibly good!

Another really good seafood dish that I had once was some tiger prawns at PF Changs.  I don’t remember what all was on it, but it was really good as well.  I think it was some kind of a buttery sauce.

I’m honestly not sure what could make these dishes better.  I think the bacon-wrapped shrimp would go really good with a steak, or maybe with more of a lemon herb sauce than an alfredo sauce.  Ok, now I’m getting hungry!

Actually, if it was in more of a lemon herb sauce it might be a good contender for the Great American Seafood Cook Off. I’ll have to see if I can check this event out to get some really good seafood ideas!

By the way, it’s always a good thing to support domestic seafood. There are a lot of positives to it, such as knowing the source of where it came from, etc. I don’t really have that option here in Utah, so if you live on the coast you’re lucky in that regard!

Vantage Point Review

Last night my wife and I rented and watched Vantage Point for the first time.

That was one intense movie! I had heard a lot of really good things about it, and I really wasn’t disappointed at all. At first when they started going back I was thinking, “oh no…the same thing again just from a different angle is all.” But i was way off. It was really cool how every person not only had a unique viewpoint, but also a unique role to play in the whole story.

Overall I would have to say I really really really liked this movie. It might even be good enough to go onto my current favorites list. So if you haven’t seen this one, I’d recommend you do!

Every Kid’s Dream…

I remember as a kid one of the cool vacations we went on was down to Disneyland.  Isn’t that every kid’s dream?  To go to Disneyland?

Well, maybe it isn’t every kid’s dream, but Disney would sure like you to think so.  But honestly, I know that it is a place that a lot of kids love to go, and I was one of them.

The only problem is that when we went to Disneyland and the Los Angeles area in general, I was too young to really appreciate it.  I think I’ll have to go back with my kids once they are at least 8-10 years old.  Then we can check out all the other things to do in Los Angeles along with visiting places like Disneyland.

My wife would also like to go to New York City sometime.  In the past I’ve had no desire to ever go there, but my mind has been changing lately.  I bet we could go on some really cool New York City tours that would make it all worth it.

I Miss Chinese Food

Chinese Food Box by Mike Hipple, FlickrFor today’s random thought, I just want to share that I haven’t eaten Chinese food in probably about a month.  And I’m starting to miss it…

Come to think of it, I haven’t had my absolute favorite food in a while either - nachos!  But today I’ll talk about Chinese food.

One of the nice things about Chinese food is that it almost always tastes the same no matter where you go.  I mean seriously, have you ever had a cashew chicken for example that really tasted different than another place?  I think they all get the food from the same place, then throw it in a pot.

Now, this doesn’t count some of the more ‘gourmet’ places like PF Changs and stuff like that.  I mean just your run of the mill, order it to go Chinese food.  In fact, it seems like you’d really have to screw it up to get a bad Chinese dish.  And those restaurants should go out of business cause they can’t get it right.

Maybe I just need to learn how to cook some for myself.  That could be fun!

It’s Almost August?!?!

I just looked at my calendar today and realized that it’s almost August!

What happened to the summer?!  There were a lot of things that I wanted to get done but haven’t.  Time flies by way too fast when you’re having fun I guess.  But then again, I didn’t have as much fun as I wanted to either!

Ok, I guess it’s time to get back to some good time management and make sure that I still finish what I wanted to.  The problem is that I’m a natural procrastinator.  But I have to admit that I am getting better at it!

Does anyone else struggle from procrastinatoritis?

Help for an IT Career

Ok ok, I admit it…I’m a computer nerd.  Not a GEEK, but I am definitely a NERD.

The good thing is that these days being at least somewhat of a nerd can pay pretty good.  But you still have to take the right path to make sure that your career is on track.

The fact is that these days there are a lot of jobs and opportunity in the IT industry.  I’m more of an IS major, but there are a lot of similarities between the two.  And the good thing is that almost every company these days needs an IT guy (or girl if you prefer)!

In the education side of IT, there are degrees and there are certifications.  A degree in IT is like what you get from a university or college.  But then there are also a lot of certifications that you can get as well.  Most of these are very specific to a company or brand, such as a Cisco certification.

The other cool thing about these certifications is that most of these companies have a training program that goes along with their certifications. That way you aren’t left in the dark as far as what you need to know in order to pass the tests.  But of course you will need to know your stuff.

What’s crazy is that my wife actually used to work for a company that helped to manage a lot of the different certification programs.  And there are a lot of them out there.  But Cisco is one that is more universal.  So check them out for info on their different programs and how they can help you in your IT career.

Starting to Gain Some Weight

I wrote a few weeks ago that I’m actually trying to put on some weight.  At the time that I wrote that post I probably weighed somewhere in the neighborhood of 190 lbs.  Well, as of last Thursday I weighed in at 201!  Not bad for only being on the program for about 2 weeks.

Now of course, I don’t expect the growth to continue at this rate, but it’s nice to see some early success.  I read in the book that I’m following (Scrawny to Brawny)  that gaining mass is a battle, and your weapon is a FORK!

Admittedly I didn’t really understand that when I first started working out a few years ago, but now I think I’m starting to get it.
